More culinary adventures. Sunday, Michelle made lasagna, which was (as always) very good. Yesterday we made spaghetti with Italian meatballs (from Central Market) and acorn squash. The squash came out kind of chewy. I don't know whether I overcooked or undercooked it, but I think I may have overcooked it.
Today I made chili and corn bread. I made the chili from a Texas chili spice pack we had. We had made half of it ages ago, so tonight I made the remaining half to finish off the pack. One pound of beef, plus spices, kidney beans, etc. I did a very good job, except I messed up one thing. The red peppers were separate so you could control the spiciness to taste. The directions said 1/4 tsp for just barely hot, which sounded about right. Only later, while licking the spoon after stirring, did I get suspicious. I realized I had indeed put in 1/4 tsp, but I had only made a half batch, so I should have put half as much as I did!
Hoo-wee! It came out spicy alright! Certainly spicier than I ever make it intentionally. Still, it was sure good. I was wolfing it down with tears running down my face. :)
